Aioli

Makes 1 cup

Ingredients:

  • 2 large garlic cloves, peeled
  • 2 large egg yolks
  • 1/4 cup Fish Broth
  • 1-1/2 teaspoons Dijon mustard
  • 3/4 teaspoon coarse sea salt
  • 1/8 teaspoon cayenne pepper
  • 1/2 cup macadamia nut oil
  • 1/4 cup extra virgin olive oil

Directions:

  1. Combine the garlic, egg yolks, broth, mustard, salt, and cayenne in a blender and puree until combined.
  2. While the machine is running, add the oils in a slow, steady stream until thick and emulsified.
