Apple-Sausage Stuffing


1 cup chopped celery
1 large onion, chopped
1 cup chopped fresh kale
3 apples, diced
2 Tbs. Mac Nut oil
2 cups organic chicken broth
2 large eggs
½ cup fresh parsley. minced
1 Tbsp. fresh sage, chopped
1 Tbsp. fresh thyme, chopped
6 cups whole wheat bread (or gluten free bread)
1 lb. fresh sausage, cooked and crumbled


Heat oven to 350 F In skillet over medium high heat, Cook first 4 ingredients in oil for 5 mins. In bowl whisk broth, eggs and fresh herbs. Add bread sauage and apple mixture, toss to combine. Spoon into greased casserole dish. Cover. Bake 40 minutes or until done, removing cover during the last 10 minutes.
