Crispy Parmesan Baskets filled with Goat Cheese

Preheat the oven to 350

Wash and dry one Styrofoam egg carton

Place about 2 tsp. of parmesan on a nonstick baking sheet, spreading the cheese into a 2 inch circle. Bake 4 to 5 minutes until cheese is bubbly. Remove from oven. Working quickly, spatula the circles off of the baking sheet and gently tuck inside an egg cup pressing the cheese to the bottom. It will form a little basket. When it cools you can fill it with the recipe below.

Cheese Filling.

6 ounces goat cheese- softened

2 tbs. whole milk

2tbsp. minced shallot

2 tbsp. chopped herbs (chives, parsley, tarragon)

1 tbsp. extra virgin olive oil

1 tsp. sherry vinegar

Salt and Pepper to taste

Put softened mixture into plastic bag- snip tip- and squirt into cups.
