Serves 6
Ingredients:
4 Tbsp. Macadamia nut oil
4 bacon slices, cooked and crumbled
3 celery ribs, peeled and chopped
1 pound fresh green beans, trimmed
1 medium onion, chopped
1 red pepper, chopped
1 orange bell pepper, chopped
2 garlic cloves, minced
1 sprig fresh thyme, chopped
1/2 cup fresh basil, chopped
1/4 tsp black pepper
1 1/2 tsp salt
Directions:
Place 4 tablespoons of oil into a large skillet and heat. Cook the celery, green beans, onions and peppers over medium high heat until tender, about 12-15 minutes. Add the next five ingredients and continue to cook, stirring often, for about 5 minutes more or until the beans are tender. Stir in the bacon, and serve.
