Ingredients (for the crust):
- 8 ounces macadamia nuts, ground
- 1/4 cup lo han
- 1/4 teaspoon coarse sea salt
- 4 tablespoons (1/2 stick) salted grass-fed butter, melted
Ingredients (for the custard):
- 3 large eggs or 6 large egg yolks
- 2 cups heavy cream
- 1/2 cup lo han or stevia
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon coarse sea salt
Directions:
- Preheat the oven to 325°F.
- To make the crust, in a medium bowl combine the nuts, lo han, and salt. Add the melted butter and stir to combine.
- Press the mixture into the bottom of a 9- or 10-inch cake, pie, or springform pan and set aside.
- To make the custard, in a medium bowl, beat the eggs slightly, then add the cream, lo han, vanilla, and salt and stir well.
- Pour the custard into the pie shell and bake until the custard is firm, about 30 minutes. Serve warm or chilled—it will almost be like two different desserts.
