Sweet Custard Pie

Serves 8

Ingredients (for the crust):

  • 8 ounces macadamia nuts, ground
  • 1/4 cup lo han
  • 1/4 teaspoon coarse sea salt
  • 4 tablespoons (1/2 stick) salted grass-fed butter, melted

Ingredients (for the custard):

  • 3 large eggs or 6 large egg yolks
  • 2 cups heavy cream
  • 1/2 cup lo han or stevia
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon coarse sea salt

Directions:

  1. Preheat the oven to 325°F.
  2. To make the crust, in a medium bowl combine the nuts, lo han, and salt. Add the melted butter and stir to combine.
  3. Press the mixture into the bottom of a 9- or 10-inch cake, pie, or springform pan and set aside.
  4. To make the custard, in a medium bowl, beat the eggs slightly, then add the cream, lo han, vanilla, and salt and stir well.
  5. Pour the custard into the pie shell and bake until the custard is firm, about 30 minutes. Serve warm or chilled—it will almost be like two different desserts.
