Try this A-List Diet-inspired recipe this weekend

It’s been a long week.

And we’ve talked a lot about the dangers of our food supply.

So, to wrap things up, allow me to share one of my favorite A-List Diet recipes…

Creamy avocado broccoflower soup

For this recipe, you’ll need:

  • 2 cups vegetable broth
  • 1 yellow onion, chopped
  • 3 cups broccoflower florets
  • 1 small avocado, peeled and pitted
  • 1 green bell pepper, cored and seeded
  • 1 red bell pepper, cored and seeded
  • 1 celery stalk, coarsely chopped
  • ½ teaspoon ground turmeric
  • ½ teaspoon ground cumin
  • ½ teaspoon dried basil
  • Coarse sea salt

(Note: Broccoflower is basically a cross between broccoli and cauliflower. If you can’t find it, feel free to substitute with a mixture of broccoli and cauliflower instead.)

First, in a medium stockpot, heat the vegetable broth over medium heat, but do not boil.

Add the onion and broccoflower—then warm for several minutes.

Remove the pot from the heat and transfer the soup to a blender.

Add the avocado, bell peppers, and celery. Then, puree until the soup is creamy. If needed or desired, you can add more water or broth.

Add the turmeric, cumin, and basil—and season with salt.

Finally, re-blend everything together and serve warm.
