1 head cauliflower, cut into florets
1/4 cup butter, softened
8 ounces sour cream
2 Tbsp. macadamia nut oil
2 ounces Parmesan cheese, grated
black pepper, freshly ground
Preheat oven to 400°F. Steam the cauliflower until very tender. Drain, then spread florets on a baking sheet. Bake for 10-12 minutes. Remove from oven. Using a potato masher, mash the cauliflower well. Return to over and bake for 10 more minutes (the more you dry out the cauliflower, the more like potatoes it will be). Remove the cauliflower from the oven and put it into a food processer or blender. Add butter, oil, and sour cream and blend until mixture reaches the desired consistency. Add salt, pepper, and Parmesan cheese to taste.
